Pastelitos de Pollo

Dominican Pastelitos stuffed with shredded chicken. This recipe is one of the best tasting pastelitos ever. Follow the instructions and you will be rewarded with many smiles from family and friends. 

Ingredients:

Serves: 5 

  1. 10 goya empanadas discos dough (pack 14oz)
  2. 2 pounds boneless chicken breast ( cut into small cubes)
  3. 1 cubanelle  pepper ( chopped )
  4. 1 red onion ( chopped)
  5. 2 cloves garlic ( minced)
  6. 1/2 cup manzanilla spanish green olives (sliced)
  7. 1 tbsp fresh lemon juice 
  8. 3 sprigs fresh cilantro
  9. 1 tsp dried oregano
  10. 1/2 tsp kosher salt
  11. 1/2 tsp black pepper
  12. 1/2 tsp cayenne pepper
  13. 1 pack sazon goya seasoning(  con cilantro y  tomato )
  14. 1 pack sazon goya seasoning (without annatto)
  15. 1 cube chicken broth
  16. 1/2 cup tomato sauce 
  17.  1/2 cup all purpose flour
  18. 1 egg  (whisked with little water)   
  19. 1 cup canola oil for frying

Instructions:

Stuffing:

  • In a medium sauce pan add the chicken, cubanelle pepper, onions, garlic, olives, lemon juice, olive oil, cilantro, oregano, salt, black pepper, cayenne and goya seasoning.
  • Mix ingredients well then add the tomato sauce. 
  • Cover and cook on medium high heat stirring occasionally. When it start boiling lower the heat and let it simmer for half hour.
  • Use potato masher to smash the chicken till they are shredded.
  • Let it cook for another 15 minutes. Uncover and let the stuffing cool down. 

Pastelitos dough:

  • Open the Goya discos dough pack, line them up on a counter or cutting board.
  • With a basting brush, brush the outside circle of the dough. 
  • Add the stuffing and fold to make a half moon.
  • With a fork press down the 2 folds together.
  • Sprinkle flour on top of each pastelitos so as not to stick.
  • In a frying pan heat canola oil and fry the pastelitos till golden color. Remove and place them on a paper towel to absorb the excess oil.
  • For healthier diet  air fry the pastelitos in an air fryer without oil. They come out as good as frying, crispy on the outside and juicy on the inside or spray a little oil over the pastelitos and bake them for 30 min or till they are golden color.
